They are of the House of Windsor, but are Known as “Wales”, ie “William of Wales”. Presumabley becauses Their father is the Prince of Wales.

Members of the family not directly in line to the throne have the particular Mountbatten-Windsor, though Those with titles tend to use the title (Wales, Wessex, etc.) as Their last name. Basically, it Comes down to whatever They feel like using.
