I’ve tried looking through her interviews on youtube, but the only interview I could find is the latest hair and Prince William did when they talked about their commitment. She has never spoken media to interview next?

Nope they never talked to the media before. From what I’ve read what they said in their engagement video was scripted / rehearsed. Most people unless they saw her staff never even her voice BEFORE hearing.
An on You Tube called “Kate Middleton Speaks! or something. This was the only time she was captured on film for the main interview that you saw. She was on a scholarship and was an unexpected question and she said something very silly like – “Yes, everything is beautiful and it’s a great idea” or something similar. This was the first time anyone had heard her talk. Other than that, she did an interview for Party Pieces about her mother making cakes when she was younger to promote the site. That would still there, but it was a written interview, no one filmed.
